Also known as moondar or Pudhina Ganthiya depending on the region, this sev is made with fresh mint leaves worked into the besan dough, giving it a cooling edge underneath the usual Rajasthani spice. Soft to eat, and a staple part of Rajasthani namkeen and farsan spreads.
From Chandra Vilas, making namkeen since 1947. Made in groundnut or cottonseed oil, never palm oil.
